Le Bissaap Martini
Sunday April 2, 2006
The winner of the Rhum Clement Cocktail Challenge was decided on last Tuesday, Le Bissaap Martini. This creative cocktail uses Rhum Clement V.S.O.P. rum, Cointreau, orange & guava juices along with homemade Bissaap flower juice. The genius behind this martini is Christophe Ouedraogo from Les Enfants Terribles restaurant in New York City. If you have never tried the ultra-premium rums of Rhum Clement, I would strongly suggest seeking out a bottle. The technique used with the sugar cane called "Rhum Agricole" (first used by founder Homere Clement) extracts the cane's natural juices by pressing, much like pressing grapes for wine. This process enhances the rum's natural flavors and results in a pure spirit. The Bissaap flower is a beautiful African flower (garnish in the photo) that is very hard to find, making this cocktail one that you probably will not be making at home.
