Humberto Marques, mixologist at Oloroso in Edinburgh, Scotland sent me a few of his original cocktail recipes last week. The two I have tried so far have left me craving the others. Marques' cocktails are based on his knowledge and practice with herbs and spices in cocktails, outlined in his Herbs & Spice in the Cocktail Mixologie. The Eucalyptus Martini is fresh and exciting and a great excuse to grow the beautiful plant in the garden, it's an eucalyptus delight and one that most palates will find pleasing. Just as thoughtful and intriguing is the Paulista, a fantastic flavor mix of blueberry and lavender.
