Mixing with Nectar

Agave nectar has been making an appearance in many cocktails as of late. Not only is this sweetner creating some spectacular new drinks, but it is also a great alternative for those who want some of the sweeter drinks without all the sugar. As an alternative to sugar, the standard conversion from the sweet nectar made from the same plant as tequila is 1/3 cup of agave nectar to 1 cup of pure sugar, with most cocktail calling for 1 Tbsp of nectar for an individual drink, which is a good starting point when substituting it for simple syrup. The flavor difference is not distinct enough to recognize in simple syrup drinks like the Grinch, Yashmak and Peartini. And much like simple syrup, agave nectar can also be infused with herbs and other flavors like the coriander nectar of the Coriandrum and the spa nectar of Square One's Organic Selection. Agave nectar is also becoming more readily available as its popularity is increasing for teas and food, so you should be able to find it at some grocers (more likely natural foods as of now) or numerous places online.
