Created in honor of legendary Oregon hospitality manager, Tom Swafford, the Swafford cocktail has caught on in both craft cocktail circles as well as more traditional restaurant and bar venues. A marriage of rye whiskey, applejack, maraschino liqueur and green Chartreuse, this is a boozy, all-alcohol drink that is surprisingly food friendly. Stir a few of these up at your next dinner party and your guest will be pleasantly surprised at how easy and sophisticated this cocktail can be. While this drink calls for Angostura bitters, try substituting the Black Mission Fig bitters from Brooklyn Bitters for a change.

Yield: 1 cocktail
Ingredients:
- 1 oz applejack
- 1 oz rye whiskey
- 1/2 oz maraschino liqueur
- 1/2 oz Green Chartreuse
- 2 dashes Angostura bitters (or substitute fig bitters)
Preparation:
- In a mixing glass, combine all ingredients.
- Add ice.
- Stir vigorously for 30 seconds.
- Strain into a chilled cocktail glass.
- Serve.
