Kevin Baker at the Isla Cantina in West Hollywood, California created this fabulous cocktail, the Racer X. This is a very fresh cocktail, complete with cucumber and grapes, which are a rather unusual pairing for X-Rated Fusion Liqueur. When working with grapes in cocktails, especially if they are already destined for the blender, I like to freeze them for a little bit - maybe 30 minutes - so they are like little, fruity ice cubes. This is a nice, light blended cocktail that is great in the summer and can easily be increased in volume to make a punch.
Ingredients:
- 2oz X-Rated Fusion Liqueur
- 2 slices of Peeled Cucumber
- 12 Red Seedless Grapes
- cucumber slices for garnish
Preparation:
- Blend all ingredients with ice in a blender.
- Garnish with slices of cucumber.
