The Sabai Sabai is also known as a Thai Welcome Drink and features the Thai spirit, Mekhong. You can also think of this as a Mekhong Collins served neat, similar to a John Collins. The basil should be a nice touch against the sweet and sour.

Ingredients:

  • 1 1/2 shots Mekhong
  • 1 1/2 shots fresh squeezed lemon juice
  • 3/4 shots simple sugar syrup
  • finger pinch of sweet Thai basil
  • club soda

Preparation:

  1. Pour Mekhong and the rest of the ingredients except club soda into a mixing glass.
  2. Add ice and shake vigorously for 7-8 seconds.
  3. Strain into a chilled martini-cocktail glass.
  4. Top off with club soda.
