Lime wedges are a great garnish for tall cocktails such as those served in highball or margarita glasses. The thicker pulp of the wedge gives the drinker the option to squeeze more lime juice into the drink as they desire and adds consistent lime flavor from the first sip to the last when dropped into the glass.
  1. Set the lime upright on the cutting board.
  2. Slice the fruit completely in half lengthwise.
