Mixologist Jason Walsh created this wonderful flip cocktail that is a modern twist on a classic style. Here, Walsh has combined Plymouth Gin with a green tea and the result is a magical herbal mix. Sen-cha (or Sencha) green tea is a Japanese style that is steamed and has 'oceanic and vegetal' notes, as described by Lindsey Goodwin, About.com Guide to Coffee and Tea. It is these characteristics that pair nicely with the fruit aspects found in Plymouth Gin.
As with any egg cocktail, be sure to give this drink a hearty shake - the type of shake that makes your arms hurt - so that the egg is mixed entirely with the other ingredients.

Ingredients:
- 2 oz Plymouth Gin
- 1 1/2 oz sweetened Sen-Cha Green Tea (chilled)
- 3/4 oz Fresh Lemon Juice
- 1 large egg white
Preparation:
- Pour the ingredients into a cocktail shaker with 3 ice cubes.
- Shake vigorously to ensure the egg is properly mixed.
- Strain into a large pony glass.
