Root vegetables do not often make an appearance in our cocktails, and that is probably why I enjoy this truly unique drink by Mixologist Jason Walsh as much as I do. Sweet red beets are a perfect pairing for the sweeter characteristics of Plymouth Gin, and the mint and lemon used in The Root to Longevity are ideal accents, making it a flourish of flavor in a glass. This is, without a doubt, a fine example of modern mixology and the influence of the culinary craft that is often sought after today. This is a drink you can bring out at a summer dinner party if you really want to impress.

Ingredients:
- 2oz Plymouth Gin
- 1oz Sweetened Beet Puree
- 3/4oz Fresh Lemon Juice
- 8 mint leaves torn
- Sprig of mint for garnish
Preparation:
- Pour the ingredients into a cocktail shaker with 6 ice cubes.
- Shake well.
- Strain into a flute glass and garnish with a sprig of mint.
