Think of the Champagne Antoine as a sparkling Dry Martini with a touch of anise, it is really that easy. This is, however, a very delicate drink that requires a fine-tuned balance between the ingredients. It is the Pernod (or other anise liqueur such as absinthe) that can easily throw the whole drink off and because of that it is important to measure this cocktail out. If you do this you will find that the Champagne Antoine is one of the more interesting champagne cocktails you have ever tasted.

Ingredients:
- 1 oz gin
- 1 oz dry vermouth
- 1/8 oz Pernod
- chilled Champagne
- lemon twist for garnish
Preparation:
- Pour the gin, vermouth and Pernod into a cocktail shaker filled with ice.
- Stir well.
- Strain into a champagne flute.
- Top with champagne.
- Garnish with a lemon twist.
