Beyond the absence of maraschino or egg in one or the other, the Eagle and the Aviation cocktails are almost the same drink. Granted, the maraschino of the Aviation is considerably more flavorful, but both are very nice uses for creme de violette, a dark liqueur that is coming back into the spotlight, even if it is just a little bit. Like with all egg cocktails you have the option to use an egg white substitute if you don't want to drink raw egg.

Ingredients:

  • 1 1/2 oz gin
  • 3/4 oz creme de violette
  • 1 oz lemon
  • 1 tsp sugar
  • 1 egg white

Preparation:

  1. Pour the ingredients into a cocktail shaker filled with ice.
  2. Shake well.
  3. Strain into a wine glass.
