Red, White and Sapphire Cocktail

This recipe for a Red, White, and Sapphire is a patriotic take on a Tom Collins, but there's a summertime twist. That is due to the "red" of fresh raspberries, which are just coming into season around the Fourth of July. The "white" refers to the club soda and the "sapphire" to one of my favorite gins, Bombay Sapphire. It is a fantastic, tall cocktail that is ideal for the hot summer days of July. For a cherry twist along these same lines, you have to check out the American Collins. The choice between the two is very difficult.

Ingredients:

  • 1 1/2 oz Bombay Sapphire Gin
  • 1 oz fresh lemon juice
  • 3/4 oz simple syrup
  • 3-4 fresh raspberries
  • 3 oz club soda
  • lemon twist for garnish
  • fresh raspberry for garnish

Preparation:

  1. Muddle raspberries with simple syrup and lemon juice in a collins glass.
  2. Add ice, Bombay Sapphire and stir well.
  3. Add more ice and top with club soda.
