Agave piñas are brought into the distillery from the fields and piled in a covered area to keep them safe from inclimate weather. At Tequila Sauza the piñas are loaded onto conveyer belts where they are fed into ovens. The baked agave is then pressed and crushed to extract the juices which will then be sent to fermentation.
