Simple (or sugar) syrup can easily be enhanced with your favorite herbs and one of my favorites is lavender. This little purple herb is ideal for adding an aromatic, light botanical flavor to any drink and makes you think immediately of spring. When choosing your lavender use buds that have not opened and flowered completely - for the best aromatic qualities go for the buds that are fully purple but still tightly wrapped. You can also use dried lavender, which you can find at most natural food or herb grocers.

Below the recipe are a few recipes that utilize lavender simple syrup and an adaptation that adds honey.

Prep Time: 7 minutes

Total Time: 7 minutes



  1. Bring water and lavender to a boil.
  2. Stir in sugar until fully dissolved.
  3. Reduce heat and simmer for 5 minutes.
  4. Remove from the heat and allow to cool, strain out the lavender.
  5. Pour into bottle and keep in the refrigerator. It will store well for about 1 week.

Lavender Honey Simple Syrup:

Another method to create this uses lavender tea and can be found in this Daiquir-ease recipe.

  • 1 cup honey
  • 1/2 cup sugar
  • 1 cup water
  • 1 Tbsp lavender flowers
  1. Bring water and lavender to a boil in a saucepan.
  2. Add sugar and honey and stir constantly until sugar is completely dissolved.
  3. Reduce heat and simmer for 5 minutes.
  4. Remove from heat, allow to cool, strain and bottle.
  5. Refrigerate. It will keep for about 1 week.
