Use this refreshing eucalyptus simple syrup to create great, herbal cocktails like the Eucalyptus Martini and Koala Mojito.

Ingredients:
- 16 ounces water
- 16 ounces sugar
- 1/3 cup fresh eucalyptus
Preparation:
- Mix sugar with water and bring to a boil.
- Simmer for 1 minute, add eucalyptus leaves and liquidize.
- Put in a bowl and cover in cling film for 15 minutes, then refrigerate.
