There's a classic peach and Champagne cocktail from the 1930's called the Bellini and this is the virgin version of that. The Baby Bellini is perfect for elegant entertaining and has the feel of a great Champagne cocktail and the same great taste of the original, but none of the alcohol. As in the Bellini, peach juice or puree can also be used. Serve this drink for brunch, a wedding reception, baby shower or other dry ocassion.
Ingredients:
- 2 oz peach nectar
- chilled sparkling cider
Preparation:
- Pour the peach nectar into a Champagne flute.
- Slowly add the Champagne.
