I had been playing with the idea of steeping masala chai tea in apple cider when I was asked to create a few non-alcoholic drinks for a "Twilight" movie party. "New Moon" was just being released on DVD and the warm, spicy drink seemed perfect for the theme. I thought Fine Wolf would be a good name because the girls were swooning over the hot-blooded guys in the movie's wolf pack.

My original purpose aside, it has become one of my favorite ways to drink chai and it works for other black teas too. It is a soothing hot tea drink in which the chai spices the cider and the cider tames the chai.

Prep Time: 5 minutes

Cook Time: 3 minutes

Total Time: 8 minutes

Ingredients:

Preparation:

Loose leaf:
  1. Bring apple cider to a near boil over low heat.
  2. Add tea leaves and spices and allow it to brew over the heat for about 1 minute.
  3. Remove from heat and allow to steep for 1 minute.
  4. Strain the tea and spices from the cider and pour into a mug.
  5. Add nectar and lemon and stir well.

Tea bag:

  1. Pour nectar and lemon juice into a mug.
  2. Heat the apple cider to a near boil.
  3. Pour hot cider into the mug, stir, then add the tea bag.
  4. Allow to steep for 3-5 minutes before removing the tea bag.
