In this new cocktail, Sadlemire added both fresh pineapple and pineapple juice, which gives it a tart and far more tropical taste that is backed up by a fine aged rum from Brugal. From a Mojito-lover's stand point this is a fantastic rendition and it's easy to offer guests the option of the original, this pineapple, or another fruity Mojito.

- 3 oz Brugal Añejo Rum
- 1 oz triple sec
- 1 oz Pineapple Juice
- 2 slices pineapple
- 4-5 lime wedges
- 6-8 mint leaves
- Mint sprig for garnish
- Muddle the pineapple, lime, and mint in the bottom of a cocktail shaker.
- Fill the shaker with ice and add the other ingredients.
- Shake well and strain into a highball glass filled with fresh ice.
- Garnish with a sprig of mint.
