The Paulista is a delightful blend of lavender and blueberries with a great cachaça for a base. It was created by Humberto Marques, who focuses his cocktails on fresh and premium ingredients. Marques tends bar at the prestigious Oloroso in Edinburgh, Scotland. He also put together an informative analysis of Herbs & Spices in Cocktail Mixology. You can either make your own lavender-infused simple syrup or use one of the pre-bottled brands like Sonoma.

Ingredients:

  • 50ml Beija- Flor Velha Cachaca
  • 12 blueberries
  • 12.5 ml lavender syrup
  • 12.5 ml blueberry liqueur
  • 25 ml lime juice
  • lavender sugar for rimming

Preparation:

  1. Muddle the blueberries with lavender syrup and blueberry liqueur.
  2. Add the rest of the ingredients and shake over ice.
  3. Strain into a martini glass rimmed with lavender sugar.
