The Raspberry Bellini is a nice little twist on the Champagne Cocktail and the Bellini - okay there's quite a difference but it's another great drink from Junior Merino. In this drink cachaca, the Brazilian rum, is the base and is perfectly flavored with fresh raspberries. I've tried both dry and sweet Champagnes and both finish the drink off wonderfully, despite each creating a different result.
Ingredients:
- 2 oz Leblon Cachaca
- 6 raspberries
- dash of lime juice
- 2 tsp superfine sugar
- top with Champagne
Preparation:
- Muddle the raspberries, sugar and lime juice in a cocktail shaker.
- Fill with ice and add cachaca.
- Shake vigorously.
- Strain into a Champagne flute.
- Top with Champagne.
