Brinley Gold Coconut Rum
While the Pina Colada may be a natural inclination for mixing the coconut, I found there was too much coconut. Yet, along the same line, the addition of curacao with this rum results in a delicious Blue Hawaiian and, again, a Banana Daiquiri. Brinley's suggested Brinley Bay Breeze, which is simply the coconut rum with pineapple juice (like a Bay Breeze) was a nice and simple drink that is far more interesting than the vodka version.
Brinley Gold Mango Rum
Mixing with the mango is a lot of fun. You can pair this rum with the amaretto of the Immaculate, the orange of a Madison Avenue or the grapefruit of a Nevada. Simple is the company's Ruby Mango (Mango Rum with cranberry, similar to a Cape Codder) and for a twist on the ordinary, a Mango Mojito will do the trick.
