Infusion

Definition: The process of infusion involves steeping herbs, fruits, teas, etc. in liquid to extract each element's dominant flavors and essences into the liquid.

Most commonly used in tea, infusions can also be used to make you own flavored spirit. Vodka is the most popular spirit to use because of its neutral characteristics but rum, tequila, gin, sake and bourbon are also great. With darker or the more flavorful spirits careful consideration must be given to selecting complimentary ingredients to avoid any unappealing flavor contrasts.
