Las Vegas mixologist, Gaston Martinez has a fantastic idea in El Pepino. Take a reposado tequila like Milagro into a Margarita, then add cucumber, cilantro and egg whites to bring an earthy flavor. The result is a smash hit and is following a trend I'm seeing more often in that cucumber is making more and more of an appearance in cocktails. It is a great ingredient and adds a freshness that no other food can touch. This would make a fabulous brunch cocktail and the recipe doesn't specify but I started out muddling and it worked great.
Ingredients:
- 1 1/2 oz Milagro Reposado Tequila
- 3/4 oz Bols Triple Sec
- 1 oz lime juice
- 3/4 oz simple syrup
- 3 slices cucumber
- 6 cilantro leaves
- 1/4 oz egg white
- cucumber slice for garnish
Preparation:
- Muddle the cucumber, cilantro and simple syrup in a cocktail shaker.
- Add the other ingredients and ice.
- Shake vigorously.
- Strain into a chilled cocktail glass.
- Garnish with a thin cucumber slice.
