La Berceuse is the brainchild of Jim Ryan from Dressler in New York City as a part of the Pernod Absinthe's "muse series." The inspiration here is Vincent Van Gogh, and if you know your art history you will remember that shortly after the tragic "ear incident" he painted the motherly La Berceuse. The model was the wife of his postman friend and he ended up doing 4 replicas of it with the intention to hang them together with a Sunflower to portray an overall concept consolation and joy. In that sense, this cocktail is as warm, soothing and comforting as the painting.
The cocktail itself is a beautiful example of absinthe's versatility. Here it is paired with tequila, which is an unusual match that takes an ingredient like strawberries to form a cohesive flavor profile. It is a combination that I suggest anyone with an interest in either absinthe or tequila try out because it's quite spectacular.

Yield: 1 Cocktail
- 1/2 part Pernod Absinthe
- 1 1/2 parts tequila blanco
- 1/2 part raw organic blue agave nectar
- 1 lemon, halved
- 3 strawberries, hulled and quartered
- Muddle strawberries and agave nectar.
- Add the juice of one-half lemon, spirits and ice.
- Shake and strain into a tall, ice-filled glass and top with seltzer.
