Simple, elegant, refreshing, and quite lovely, this is the Pot of Gold. It may only have five ingredients, but these are some intense flavors that work extremely well together. Reading this recipe, you may think that it is a gentle, sweet drink, that is until you get to the ginger beer. It is this addition that really kicks the flavor up to a new level of interest.

I found that I prefer this made with St. Germain over an elderflower syrup, though the drink made with the syrup by either Darbo or Monin were very good as well. Which you choose to use may just be a matter of what is on hand. For a springtime drink (St. Patrick's Day and not), this is a gem that will soon become a favorite.

Preparation:

  1. Muddle cucumber and mint. Add Voli and elderflower.
  2. Shake and strain into a chilled cocktail glass, then top with ginger beer.
  3. Garnish with cucumber wheel and mint.

A bit about Voli Vodka:

Voli is one of the newer vodkas that follows a trend in 'healthier' distilled spirits. Reportedly, these are "25-40% lower in calories than leading brands" and that makes them a great base to begin with for those who are watching their calorie intake. Though, we also need to keep in mind the mixers of these cocktails as each ingredient will contribute to a higher calorie count overall. For this particular Pot of Gold recipe, there are approximately 178 calories per drink (this will vary depending primarily on the elderflower ingredient you use).

The Voli Vodka line includes Lyte (the clear vodka base) and 4 flavors, which are rather interesting and worth tasting. Those flavors are: Lemon, Espresso Vanilla, Raspberry Cocoa, and Orange Vanilla. The other nice aspect of Voli is that it is affordable at right around $20 for a 750ml bottle. While we are on the subject of calorie counts, let's look at how 3 options for the elderflower flavor compare. Below are the estimated calories for the 1/2 ounce serving in this recipe.

  • Darbo Elderflower Syrup - approximately 5.5 calories based on 39 calories per 100ml (Note that sometimes this brand is also spelled D'Arbo - helpful information when searching)
  • Monin Elderflower Syrup - approximately 45 calories
  • St. Germain Elderflower Liqueur - approximately 51 calories
As you can see, there can be a significant difference depending on the brand you choose. The essential thing to remember is that if you are counting calories, look at the individual brand's nutrition information.

Ginger Beer Nutrition:

The calories in ginger beer vary depending on the brand as well. I have found ginger beers that range from 12-25 calories per 1 ounce serving. It is also likely that you will use less than an ounce when topping the Pot of Gold, so take that into account.
