Sweet and seductive, the Yellow Fairy is one of my favorite spring dessert cocktails. For this drink I've paired the botanicals of gin (I prefer Bulldog or Damrak) and the ultra-sweetness of lemoncello with a hint of absinthe. It all ends up balancing out nicely but you do want to be gentle with the absinthe as it can easily take over the entire drink. In this case (as it often is in absinthe cocktails, such as a Mile High Manhattan) less is more.

Yield: 1 Cocktail
Ingredients:
- 2 oz gin
- 1 oz lemoncello
- 1/4 oz absinthe
- Dash of aromatic bitters
Preparation:
- Pour the ingredients into a cocktail shaker filled with ice.
- Shake well.
- Strain into a chilled cocktail glass.
