During the coldest winter nights, nothing quite warms you like a bit of whiskey. While most people think of a spiced butter batter as only appropriate for rum, if you pair it with the right whiskey you’ll be surprised at just how well it goes.

This quick, easy to prepare spiced rum batter keeps well and is versatile with different whiskies. Try it with a sweeter bourbon like Four Roses if you like a softer, sweeter drink, or bring out more spice notes with Wild Turkey 101. For an even more unusual twist, try a hot buttered single malt Scotch. Oban, The Dalmore, and Highland Park are my personal favorites in this drink but feel free to experiment with both the recipe and the whiskies you might choose to find your personal favorite.

  • 2 oz whiskey
  • 1 stick butter, room temp
  • 3/4 c brown sugar
  • 1/4 cup agave nectar
  • 1/2 tsp cinnamon
  • Pinch salt
  • 1/8 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp clove

  • For the batter: In a mixer using the paddle attachment, add all ingredients. Mix well for 1-2 minutes until all ingredients are incorporated. Turn out onto a sheet of plastic wrap. Wrap tightly and refrigerate for at least 1 hour or until firm.
  • To make a hot buttered whiskey, simply slice a good dollop off of the batter (about 1 ounce), add to a mug with 2 oz whiskey fill with hot water, stir to incorporate, and enjoy.
