You can find a fine Pink Campari being served at the Grand Del Mar golf resort in San Diego or you can make one at home thanks to this recipe. I like the Pink Campari because it shows an evolution in how to use the bitter Italian aperitif creatively in cocktails. This one is certainly not lacking in flavor, with it's combination of rye whiskey, raspberry, pear, cranberry and, of course, Campari - it is simply a first-rate cocktail.
Ingredients:
- 1 oz Campar
- 1 oz rye whiske
- 4-5 fresh raspberrie
- splash of pear and cranberry juice
- splash of sweet and sour mi
- raspberries for garnis
- lime twist for garnis
Preparation:
- Fill a martini shaker with ice and add all ingredients.
- Shake well and pour into a chilled martini glass.
- Garnish with skewered raspberries and lime twist.
